• 2 eggs
  • 2 teaspoons vanilla
  • 1 ⅓ cups sugar
  • 3 cups grated zucchini
  • cups melted butter
  • 2 teaspoons baking soda
  • 1 pinch salt
  • ½ teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 1 cup chopped pecans
  • 1 cup raisins


Preheat the oven to 350 degrees; butter two bread pans.
In the stand mixer, mix the eggs, vanilla and sugar together until the sugar is dissolved. Add the zucchini and melted butter and stir well. Sprinkle the baking soda and salt on top of the mixture and blend. Add the flour, one cup at a time along with the nutmeg and cinnamon. Add the pecans. Remove the bowl from the mixer and fold in the raisins. Divide the mixture between the two bread pans. Bake for one hour or until a toothpick comes out clean. Remove from pans to cool.
