• 1 ½ pounds ground beef
  • 2 slices bread , cubed
  • ½ cup milk
  • 1 rib celery
  • 1 cup carrots, peeled
  • 1 potato, peeled
  • 1 onion
  • 1 egg
  • 1 apple
  • salt and pepper, to taste
  • ½ cup ketchup


Put bread in a large mixing bowl and pour milk over it. Grate the celery, carrot, potato, apple, and onion. (You can use the food processor). Add ground beef, ketchup, and chopped ingredients to the bread and milk. Add egg. Mix until blended. Line a cookie sheet with edges using aluminum foil. Spray with Pam. Shape the loaf on the sheet. Bake at 350 degrees for one hour and fifteen minutes. Pour off the fat. Let the loaf rest for about 15 minutes before slicing.

When Jessie was little, we would shape the meat loaf into an animal shape or a jack o'lantern for fun. Sue and Helen swear they have never heard of this recipe, but Wanda gave it to me when I called her up at Bill's insistence the first year we were married.
