• ½ cup fresh lime juice
  • 2 tablespoons tequila
  • 4 tablespoons finely minced fresh mint
  • 2 tablespoons crystallized ginger
  • Grated zest of 2 limes
  • 1 pound sea scallops


1. In a shallow glass dish, combine the lime juice, tequila, mint, ginger and lime zest. Add the scallops and toss gently to coat. Marinate at room temperature for 10 minutes.
2. Light the grill.
3. Divide the scallops among skewers. If the scallops are nice and big, use a pair of skewers on the scallops so you'll be able to turn them easily.
4. Brush the grill with olive oil ( or the scallops if you prefer) to keep them from sticking.
5. Broil for 2 1/2 minutes and turn them over. Grill for another 1 1/2 minutes brushing with the marinade.
