• ½ cup fresh lime juice
  • 2 tablespoons tequila
  • 4 tablespoons fresh mint, minced
  • 2 tablespoons crystallized ginger, minced
  • grated zest of two limes
  • 1 ½ pounds sea scallops


In a shallow glass dish, combine the lime juice, tequila, mint, ginger, and lime zest. Add the scallops and toss gently to coat. Marinate at room temperature for 10 minutes.
Divide the scallops among skewers.
Broil over medium heat for 2 1/2 minutes, turn, and broil for 1 1/2 minutes brushing once with the marinade.
