• 1 cup white rice
  • ¼ cup maple syrup
  • ¼ tsp cayenne pepper
  • 1 pound skinless salmon filet, cut in four pieces
  • coarse salt and ground pepper
  • ½ pineapple, peeled, cored and cut in 8 pieces lengthwise
  • lime wedges for serving
  • 1.4 cup chopped cilantro leaves


Heat broiler with rack in top position (or heat grill). Cook rice according to package instructions. Meanwhile in a small bowl, stir together maple syrup and cayenne pepper. Season salmon with salt and pepper. Spray a rimmed baking sheet with Pam, arrange salmon and pineapple in a single layer, and brush with half the glaze. Broil until salmon is cooked through, about 8-11 minutes or grill salmon 4 minutes on a side, brushing with glaze. Cut pineapple into chunks. Add cilantro to rice and fluff with a fork. Serve rice with salmon, pineapple and lime wedges.
