• ¼ cup butter
  • cup finely chopped onion
  • cup brown sugar
  • 1 teaspoon salt
  • teaspoon pepper
  • 2 16 ounce cans stewed tomatoes
  • 1 ½ cups prepared croutons


Heat oven to 325 degrees. In a skillet melt butter and stir in onion, cook a few minutes. Add sugar, salt, and tomatoes. Arrange croutons in bottom of 1 1/2 quart baking dish. Spoon tomato mixture over. Bake 45 minutes, until croutons on surface are browned and mixture is bubbling hot. Makes about 1 quart. This is a rather sweet tasting dish, so it goes well with country ham or fried chicken, cole slaw and corn bread.
