• 20 Fresh mushroom caps (save the stems for something else)
  • 2 ounces cream cheese
  • 1 handful spinach leaves (large stems removed)
  • 2 ounces manchengo cheese


Place mushrooms in a pyrex dish and microwave on high for 4 minutes. Drain the mushrooms and transfer them to a dish that you can use in the broiler. Puree the remaining ingredients in the food processor and stuff the mushrooms with the bright green filling. Broil the mushrooms until the cheesy mixture is bubbly. Serve warm.
