Ingredients
- 4 green onions, minced
- 1 cup fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon sugar
- 1 jalapeno, seeds removed
- 1 teaspoon salt
- 1 can corn kernels, drained
- 1 can black beans, drained and rinsed
- 1 zucchini, diced
- 1 avocado, diced
- 1 red bell pepper, seeded and diced
- 1 ¼ pounds shrimp, cooked and peeled
Directions
Put the first six ingredients in a food processor and process until emulsified.
Combine the remaining ingredients and toss with the dressing. Refrigeratwe 1-6 hours.
