Ingredients

  • 2 cups shredded cabbage
  • 2 medium-sized carrots, peeled and cut in julienne strips
  • 1 large boiling potato, peeled, boiled, and cut into small dice
  • 1 medium tart apple, peeled, cored and diced small
  • 2 hard cooked eggs, chopped
  • 1 cup cooked green peas
  • salt and pepper
  • ¾ cups mayonnaise
  • ½ cup sour cream
  • 1 tablespoon dijon mustard
  • 2 tablespoon fresh lemon juice
  • ½ teaspoon sugar

Directions

Combine cabbage, carots, potato, apple, eggs, and peas in a large bowl and toss well. Season generously with salt and pepper.

In another bowl combine the mayonnaise, sour cream, dijon mustard, lemon juice, sugar and more salt and pepper. Blend well. Toss the salad with the dressing, cover, and refrigerate until ready to serve.
