• 1 4 pound pork roast or shoulder
  • ¼ cup brown sugar
  • 2 tablespoons paprika
  • 2 tablespoons chili powder
  • 1 teaspoon ground mace
  • 2 tablespoons ground cumin
  • 1 tablespoon salt


Combine dry ingredients to create the rub. Rub the ingredients all over the roast. Place the roast in a covered roasting pan (dutch oven) and cook in a slow oven (325° ) for 2 1/2 to 3 hours. Check it starting at 2 1/2 hours. It will be done when the meat pulls apart. Let it cool and then put on your rubber gloves and go through it to remove excess fat, gristle, and bones. Chop the remaining meat until it looks they way you want it to for sandwiches. Serve on hamburger buns with a squirt of your favorite barbecue sauce and a scoop of coleslaw.
