Ingredients

  • 1 ½ cups all purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoons baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup sour cream
  • 2 eggs
  • 1 cup peaches, peeled and diced
  • ½ cup flour
  • 2 tablespoon sugar
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • 3 tablespoons butter

Directions

Preheat oven to 350°. The first group of ingredients makes the cake. The second group makes the streusel topping. Stir the dry ingredients for the cake with a whisk in a bowl. In another bowl, beat the sour cream and eggs with a hand mixer. Combine the wet and dry ingredients at low speed to make a stiff batter. Gently fold in the peaches and pour into a greased 8x8 baking dish.
Rub together the streusel topping ingredients in a small bowl until they resemble coarse crumbs. Sprinkle on the top of the cake and bake 40-50minutes unit golden brown and the middle springs back when you press it.
