Ingredients

  • 1 cup onion, chopped
  • 1 tablespoon oil
  • 1 lb. sweet potatoes, peeled and cubed
  • 3 cups vegetable broth
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 2 cloves garlic, pressed
  • 1 cup corn kernels
  • 1 jalapeno, minced
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • 1 tablespoon lime juice

Directions

Saute onion and garlic in oil until tender. Add potatoes and saute about five minutes. Add broth. Simmer 20 minutes until potatoes are mushy. Add ginger, allspice, turmeric and salt. Puree in food processor until smooth. Return to heat. Add corn. Squeeze in lime juice right before serving.
