Ingredients

  • 1 cup olive oil
  • 1 large lemon
  • 2-4 teaspoons dry oregano
  • 3 teaspoons minced garlic
  • 1 teaspoon dry basil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • ½ teaspoon ground pepper
  • 1 large head of romaine, chopped
  • 2-3 plum tomatoes cut in wedges
  • 1 English cucumber, peeled seeded and chopped
  • 1 red onion, sliced thin
  • 1 green bell pepper, sliced
  • ½ pound feta cheese
  • 1 cup kalamata olives, seeded

Directions

Juice the lemon. Put the olive oil, lemon juice, oregano, garlic, basil vinegar, salt, sugar and pepper in the bowl of a food processor. Process until smooth. Let chill in the refrigerator for a couple of hours before serving to blend the flavors.
Place salad ingredients in a large bowl and pour dressing over. (You probably won't need all the dressing. You can save some for next time.) Toss to combine.
