Ingredients

  • 1 pound lump crabmeat
  • ½ cup chopped onion
  • 2-3 cloves garlic, minced
  • 1 tablespoon dijon mustard
  • 2 shakes worcestershire sauce
  • 2-3 shakes tabasco
  • 2 tablespoon bread crumbs (preferably whole wheat)
  • ½ cup mayonnaise
  • 1 egg
  • fresh parsley, chopped (optional)

Directions

Saute the onion and garlic in a little olive oil until tender. Check the crabmeat for cartilage. Mix in onion, garlic, bread crumbs, mustard, worcestershire, tabasco, mayonnaise, and egg. Form into patties--a pound will make eight small ones and serve four people. Put the patties on a plate and cover with waxed paper and refrigerate for an hour or so. In a large skillet, heat vegetable oil and a little butter until it is just smoking. Fry the patties on one side until they are brown and turn them over. Lower the heat to medium and let them brown on the second side. Drain on paper towels.
