• 2 cups quick cooking couscous, (not whole wheat)
  • 3 cups boiling water
  • 1 medium-sized orange
  • 1 tablespoon dried dill weed
  • ½ cup minced, toasted, pistachio nuts


Place couscous in a medium sized bowl. Pour in the boiling water, and cover the bowl witha plate. Let stand for 15-20 minutes, or until couscous is tender. Fluff thoroughly with a fork and add salt to taste.
Grate the zest from the orange and then squeeze out all the juice. Add the zest and juice to the couscous, along with the dill.. Mix well, make sure there are no clumbs of couscous left on the bottom of the bowl. Cover tightly, and set aside until serving time. Sprinkle lightly with pistachios before serving.
