Ingredients

  • 1 box couscous
  • 1 bag spinach
  • olive oil
  • 1 handful pine nuts

Directions

Toast the pine nuts. Saute the spinach in the olive oil until it is just cooked. Place in a bowl and chop with two knives. Prepare the cous cous according to the package directions. Right before serving, mix the chopped spinach and the pine nuts into the cous cous.
