Ingredients

  • 3 tablespoons vegetable oil
  • 2 cups chopped onion
  • 1 tablespoon chopped garlic , (or more)
  • 1 tablespoon fresh ginger, chopped
  • 1 teaspoon cinnamon
  • 8 green cardamon pods, (or 4 black)
  • 4 whole cloves
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon red pepper , (I used less)
  • 1 can tomato puree
  • 6 tablespoons almond butter
  • 1 ½ tablespoons fresh lemon juice
  • fresh coriander leaves , for garnish if you have them

Directions

Saute the onions and then add the garlic and ginger and cook until soft. Add the spices amd cook them for a couple of minutes. Add the rest of the ingredients. You will probably have to thin the sauce with water and when it is cooked, you can add about 1/2 cup of water or a couple of ounces of cream cheese to make it creamier. Puree the sauce in a blender to make it very smooth.

Saute chicken or pork or beef or tofu and then stir in this sauce. Serve over rice. Garnish with fresh coriander leaves if you can get them.
