• 1 cup butter, at room temperature
  • 1 cup sugar
  • 3 large eggs
  • 1 cup buttermilk
  • 2 cups flour
  • 1 cup blueberries, fresh or frozen
  • 2 teaspoons baking powder
  • pinch salt
  • 1 teaspoon vanilla
  • 1 teaspoon nutmeg


Preheat oven 375°. In medium sized bowl, cream butter and sugar until light and fluffy. Add eggs one by one beating after each addition. Beat in buttermilk. In a small bowl, toss blueberries with 1/4 cup flour. In a medium bowl sift flour, baking powder, salt and nutmeg.Combine wet and dry ingredients, fold in blueberries and vanilla. Be careful not to overmix. Pour into a greased, square baking dish. Bake for 35-45 minutes. Cake is done when a toothpick inserted in the middle comes out clean.
