Ingredients

  • 1 Tablespoon vegetable oil
  • 1 onion, minced
  • 3 cloves garlic, minced
  • 1-2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon oregano
  • ¼ teaspoon cayenne pepper
  • 1 small jalapeno (seeds removed), minced
  • 2 pounds ground beef (85%/15%)
  • 1 8 oz can tomato sauce
  • 1 cup chicken broth
  • 1 tablespoon cider vinegar
  • 1 tablespoon light brown sugar

Directions

Saute the onion and garlic until soft but not brown. Add jalapeno and spices and continue to cook for another minute or two. Add ground beef and brown, stirring frequently. Add tomato sauce, chicken broth, vinegar and brown sugar. Simmer for 45 minutes to an hour. Let the pot cool and then put it in the refrigerator overnight. The next day, remove solidified fat from the top before warming the beef for the tacos. Makes a lot. Tastes good.
