Ingredients

  • 1 stick margarine or butter
  • 1 cup white sugar
  • 2 eggs
  • 3 ripe bananas
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ cup chopped pecans
  • ½ teaspoon salt

Directions

In the bowl of a food processor cream margarine and sugar until fluffy. Add eggs, bananas and vanilla and process until smooth. Add flour, soda, salt, cinnamon and pecan. Pulse as few times as it takes for the flour to disappear and the batter to appear. Bake in a greased loaf pan for one hour and 5 to 10 minutes at 350°.
