Ingredients

  • 2 cans artichoke hearts packed in water
  • 4-5 slices whole wheat bread, cubed
  • ½ cup chopped fresh parsley
  • 1 onion, chopped
  • 9 eggs , lightly beaten
  • ½ cup grated parmesan cheese
  • salt and pepper
  • olive oil

Directions

Simmer artichokes in the liquid they were canned in until they are tender. Drain them and chop them up. Chop other ingredients and mix all the ingredients except the eggs and oil together. Stir in the eggs. Heat oil in skillet until it smokes. Drop little spoonfuls of the mixture into the oil and fry until brown and crisp on one side. Turn them over and fry until they are brown and crisp on the other side as well. Drain on paper towels. Serve hot or cold. Makes a lot.
