• 3 ½ cups all purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup canola oil
  • 1 ½ cups sugar
  • 2 large eggs
  • 2 large egg whites
  • 1 teaspoon lemon zest
  • ½ teaspoon orange zest
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla


Preheat oven to 375 degrees. Whisk flour, baking powder and salt together. Beat oil, sugar, eggs, eggwhites, lemon and orange zest, almond extract, and vanilla at medium speed until well blended. Gradually stir the flour mixure into the egg mixture until well blended and smooth. Shape the dough into 2 smooth evenly shaped 11x 1/2 inch logs. Arrange the logs on a cookie sheet and press to flatten. Bake 25 minutes. Remove from oven. When the logs are cool enough to handle carefully transplant to a cutting board and cut crosswise, on a slight diagonal into 3/8 inch slices. Lay the slices flat on the sheet and bake for 10 minutes. Turn the slices over and bake until lightly browned, 5-10 minutes more. Transfer to racks to cool.
