Ingredients
- 3 tablespoons soft butter
- ¾ cup sugar
- 3 eggs
- 2 teaspoons vanilla
- 3 ½ cups milk
- 8 cups bread cubes cut in 1" squares, (heavy artisan bread--day old)
- 2 cups blueberries (fresh or frozen)
- 2 teaspoons sugar
- ½ teaspoon cinnamon
Directions
In a large mixing bowl, beat butter and sugar with electric mixer on med/high speed until well combined. Add eggs and vanilla; beat 2-3 minutes or until fluffy. Slowly stir in milk.
Place bread cubes in extra large bowl; pour milk mixture over the bread soaking all cubes and let stand 5 minutes. Gently stir blueberries into the bread mixture; transfer to an ungreased 3-quart baking dish. Combine 2 tablespoons sugar and cinnamon; sprinkle evenly over the mixture.
Bake about 35 minutes at 350°. Serve warm.
