Zero Points Soup

Ingredients

  • 1 cup carrots, peeled and sliced
  • 1 cup frozen chopped spinach
  • 1 cup green beans
  • 1 cup broccoli florets
  • 1 can tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, pressed
  • salt & pepper, to taste
  • 1 tsp penzey's pasta sprinkle
  • 4 cups vegetable broth

Method

Saute onions and garlic together in a Pammed pan.

Add tomatoes, liquids, and seasonings. Bring to a boil, then simmer for 1 hour. Add spinach, broccoli and green beans at the last minute so that they don't get too soft.

Notes

Best after 24 hours in the refrigerator.

Can also add pastina or baby cheese ravioli. The pasta makes it 2 point soup rather than 0 point soup.
