Wild Rice Soup


  • ¼ cup wild rice
  • 4 cups chicken broth
  • ½ cup chopped green pepper
  • ½ cup chopped onion
  • fresh mushrooms, sliced
  • ¼ cup butter
  • ½ cup flour
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 2 tbsp chopped almonds
  • 1 cup cream or half and half


Cook rice in chicken broth for 20-30 minutes. Saute vegetables in butter; add flour; add cream; slowly stir broth and rice into vegetables. Heat and serve.
