Walnut Vinaigrette

Ingredients

  • Reserved beet juices from baking beets (above), see Beet Salad recipe
  • ¼ cup red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • ½ cup water
  • 1 shallot, minced
  • Salt and pepper, to taste
  • ¼ cup walnut oil

Method

In a bowl, combine reserved beet juice, red wine and balsamic vinegars, honey, water, shallot, salt and pepper, and whisk together. Slowly add walnut oil, whisking constantly to emulsify.

Makes 1 cup.
