Vegetarian Shepherd's Pie


  • 2 lbs Yukon Gold potatoes, peeled & diced
  • ¼ cup regular or soy milk
  • 2 tablespoons olive oil
  • 1 med yellow onion, chopped
  • 1 med carrot, chopped
  • 1 ½ cups vegetarian burger crumbles
  • ½ cup frozen peas
  • ½ cup frozen corn
  • 1 tablespoon tamari or other soy sauce
  • ½ teaspoon dried thyme
  • 1 ½ cups Good Gravy
  • salt & pepper


1. Place potatoes in a med saucepan, cover with salted water, and bring to a boil. Reduce heat to medium low, cover, and simmer until tender 20-30 min.
2. Drain the potatoes and return to the pan. Add the milk and mash until smooth, then season with salt to taste.
3. Meanwhile, preheat oven to 350˚. Lightly oil a shallow 1 1/2 quart baking dish.
4. Hat 1 T of oil in a lg sillet over medium heat. Add the onion and carrrot, cover, and cook, stirring a few times until softened, 5-7 minutes. Stir in burger crumbles, peas, corn tamari, thyme, and 1 cup of the gravy, adding upt to 1/2 c more if necessary to moisten. Season with salt and pepper to taste.
5. Spoon filling into dish. Spread mashed potatoes on top and drizzle with remaining T of oil.
6. Bake until heated through and the top is golden, 20-30 minutes. Serve hot.
