Vegetable Stroganoff


  • 1 teaspoon olive oil --
  • ½ cup sliced onions
  • 3 cups mushrooms, halved
  • 2 cloves garlic, pressed
  • 1 cup green beans, sliced
  • 2 large carrots, chopped
  • 2 tablespoons tomato paste
  • 1 cup white wine
  • 2 teaspoons cornstarch
  • ½ cup fat-free sour cream


Heat oil; saute onion 2-3 minutes. Add mushrooms and garlic. Cook 5 minutes. Add beans, carrots, tomato paste, and wine. Cover and simmer for 25 minutes. In a glass measuring cup, stir together cornstarch and sour cream until smooth. Stir into the sauce and continue stirring as sauce thickens. Server over hot egg noodles.
