Vegetable Stew


  • 1 small onion(s)
  • 2 ounces rutabagas
  • 1 small carrot(s)
  • 1 cup mushroom(s)
  • 1 cup brussels sprouts
  • 1 tablespoon olive oil
  • 2 ounces cauliflower
  • 1 tablespoon canned tomato paste
  • ½ teaspoon Marjoram, dried
  • 1 leaf bay leaf
  • teaspoon black pepper
  • cup water
  • 2 teaspoons low-sodium soy sauce
  • 1 slice whole-wheat bread


Chop the onion finely. Dice the rutabaga and carrot into roughly the same size. Slice the mushrooms. Halve the sprouts. Heat the oil in a saucepan and add the vegetables. Stir well for 2-3 minutes. Add the tomato paste , the herbs and pepper, then pour in the water. Stir well, bring to a boil, lower heat, cover pan, and simmer for 15-20 minutes, by while time most of all of the water should have been absorbed and the vegetables all tender. Stir in a little soy sauce to taste, and serve immediately accompanied by thick slices of bread.
