Vegetable Pilaf

Ingredients

  • 2 tbsp sunflower oil
  • 1 red onion, chopped
  • ¾ cup basmati rice
  • a few strands of saffron
  • ¼ cup corn kernels
  • 1 red bell pepper, seeded and diced
  • 1 tsp curry powder
  • 1 tsp chili powder
  • 1 green chile, seeded and chopped
  • 1 cup broccoli florets
  • 2 ½ cups vegetable broth
  • ½ cup cooked and peeled chestnuts, halved
  • cup raisins
  • cup low-fat plain yogurt
  • 2 tbsp fresh chopped mint
  • pinch cayenne pepper

Method

Heat the oil in a skillet and add the onion and rice. Cook for 3-4 minutes, stirring. Add the remaining ingredients (except yogurt, mint, and cayenne) and bring the mixture to a boil. Reduce the heat and cook for a further 30 minutes, stirring occasionally until the rice is cooked and the liquid absorbed. Mix together the yogurt, mint, and cayenne, and serve with the pilaf and a side salad.
