Use 'Em Up Summer Squash Pie


  • 1 medium zucchini, shredded
  • 1 medium yellow squash, shredded
  • 4 very small potatoes, shredded
  • 4 carrots, shredded
  • 1 medium sweet potato, peeled and shredded
  • 10 eggs, lightly beaten
  • 1 16 oz. container fat free cottage cheese
  • ½ cup parmesan cheese, shredded
  • 1 tsp Penzey's Mural of Flavor Seasoning
  • ½ cup Food for Life Gluten Free Rice Almond Bread, toasted hard and pulverized into bread crumbs


Preheat oven to 350.

Combine shredded veggies, beaten eggs, cottage cheese, breadcrumbs, and seasonings in a large bowl and use your hands to mix until combined. Put mixture into a 9x13 pan and bake 45 minutes. Then, raise the oven temperature to 400 and bake for another 15-20 minutes or until the casserole is set.
