Tuna Ordeal

Ingredients

  • 1 can tuna, drained
  • 1 cup cooked fettuccini pasta, boiled and drained
  • 2 tbsp pesto
  • 1 tbsp corn starch
  • 12 oz. evaporated skim milk
  • 1 medium tomato, diced
  • 2 tbsp butter, melted
  • 1 tbsp sour cream
  • ¼ cup parmesan cheese, grated

Method

Heat melted butter until bubbling, then add corn starch. Whisk to make a roux. When the paste is browned, add the evaporated skim milk little by little, and whisk until smooth and creamy. Add the pesto, then sour cream, then the tuna, then the parmesan, whisking all the while. Just before serving, add the tomatoes. Toss with the cooked fettuccini noodles so that they are coated in sauce, and serve.
