Tofu Scramble

Ingredients

  • ½ lb. tofu block, squeezed
  • 1 bag Simply Potatoes, cubes
  • ½ cup broccoli, florets
  • a few mushrooms, sliced
  • ½ package frozen spinach, squeezed
  • nutritional yeast flakes
  • turmeric
  • salt
  • pepper
  • garlic
  • tamari soy sauce

Method

Tofu Scramble
Take half block of tofu - squeeze some water out by gently squeezing fist size pieces, crumble tofu into big pan. Chop and add potatoes up in 1/2 inch pieces (I usually buy them already prepared this way frozen), broccoli, mushrooms, spinach (basically - whatever veggies you have around). Add nutritional yeast flakes, tumeric, garlic, tamari, salt and pepper.
