Those Amazing Yams


  • 2 lb. sweet potatoes, peeled and cut into 1.5" chunks
  • ¼ cup water
  • 2 tablespoons Earth Balance dairy free margarine
  • 1 tablespoon Pure Maple Syrup, Grade B (or to taste, depending on how sweet you like things)
  • Penzey's Spices Mural of Flavor, to taste
  • salt and pepper, to taste


Preheat the oven to 375. Place the sweet potato chunks in a microwave-safe dish with the water and cover them over, making sure that the plastic does not contact the sweet potatoes. Nuke them on high for 5 minutes. Microwave wattages vary, but the sweet potatoes were hot and had darkened in color and started to soften, not yielding much when pricked with a fork.

Spray a 9x13" glass pan with Pam. Place the Earth Balance and maple syrup in the pan. Add the hot sweet potato chunks with their cooking water and stir around, melting the Earth Balance and coating the potatoes evenly with Earth Balance and maple syrup. Sprinkle coated potatoes with Mural of Flavor and salt and pepper to season them, but don't overdo it. Cover the pan and bake the potatoes for approximately 40 minutes. They're done when they've lost their edges and will melt in your mouth.
