Stir Fried Tofu and Broccoli

Ingredients

  • ½ cup natural peanut butter
  • ¾ cup hot water
  • ¼ cup cider vinegar
  • 2 tablespoon soy sauce
  • 2 tablespoon molasses
  • ½ tsp. crushed red pepper
  • 4 tsp canola oil
  • 2 tsp. minced ginger root
  • 4 tsp minced garlic
  • 1 lb. firm tofu
  • 2 large onions, sliced
  • 1 bunch broccoli,, cut into small flowerets and stems thinly sliced
  • 1 cup raw peanuts, chopped
  • 2 tbsp soy sauce
  • ¼ cup minced scallions

Method

Whisk natural peanut butter through crushed red pepper flakes together in saucepan for sauce.

Heat 2 t. oil in wok, stir fry ginger and garlic. Add tofu and stir fry for 5 minutes. Put contents of wok into saucepan containing sauce.

Wipe out wok and add remaining oil and onions. Stir fry and add broccoli and peanuts along with soy sauce. Stir fry until broccoli is tender crisp. Gently heat sauce and add to skillet. Add scallions and toss.
