Stir-fried Vegetable Rice with Almonds


  • ½ cup almonds
  • 1 small onion
  • 1 tbsp vegetable oil
  • 1 clove garlic
  • ½ green pepper
  • 1 small carrot
  • 2 oz. mushrooms
  • 2 oz. frozen peas
  • ⅓-½ cup brown rice, cooked
  • 3-4 tsp soy sauce


1. Put the almonds under the broiler and toast until browned.
2. Chop the onion. Heat the oil in a frying pan or wok and add the onion. Cook for a minute or two. Chop the garlic finely and add to the pan; saute for 2-3 minutes longer.
3. Chop the green pepper and carrot finely. Slice the mushrooms. Add these to the pan along with the peas. Stir-fry the vegetables for 3-5 minutes.
4. Add the rice and soy sauce to the vegetables and stir well. Stir-fry for an additional 3-5 minutes.
5. Mix the almonds into the rice and serve immediately.
