Spinach Hand Pies

Ingredients

  • 1 roll Athens Phyllo dough, 1/2 of 1 box or 8 oz.
  • 2 pkgs frozen spinach
  • 1 ½ cups broccoli
  • 1 teaspoon Penzey's Pasta Sprinkle
  • salt and pepper to taste
  • teaspoon nutmeg
  • 1 teaspoon olive oil
  • 1 cup chopped onion
  • 3 cloves garlic, pressed
  • 6 wedges Laughing Cow, garlic and herb flavor
  • ¾ cup chopped pecans

Method

Steam broccoli and spinach together and drain well, using a cloth to squeeze water out of the spinach if needed. Set aside.

Peel the garlic and chop the onions and saute them together in the olive oil. When they have become soft, add the salt, pepper, nutmeg, and Penzey's Pasta Sprinkle and continue to cook them until they are limp.

Put the vegetables and the garlic/onion mixture into work bowl of food processor. Process until smoothe. Then add cheese wedges and pecans, and process until smoothe again.

Unroll the phyllo dough onto a board and cut all the sheets together in half lengthwise. Stack one half of the sheets on top of the other so you have one stack. Cover the stack with a moist paper towel. Get a sheet pan ready to put the finished pies on.

Take three half-sheets of the dough still stacked together and lay them down. Put about 2-3 tablespoons of the mixture at one end of the dough. Pull one corner up and over the filling diagonally to meet the opposite side and make a right triangle shape. Then take the bottom triangle point and fold it upwards. Then fold the corner opposite the hypoteneuse of the triangle on the diagonal. Continue rolling into a triangle shape until you run out of dough.

Spray the finished triangular pies with cooking spray and bake for approximately 1/2 hour at 375 or until golden brown. If you plan to freeze the pies, take them out of the oven before they are completely browned.

Makes approximately 20 pies, 3 points each.
