Spaghetti with Olive Sauce


  • 6 ounces tomato(es)
  • 6 items Sardo Kalamata Olives
  • 1 clove garlic clove(s)
  • 3 teaspoons olive oil
  • ¼ teaspoon ground oregano
  • teaspoon black pepper
  • 1 tablespoon parsley
  • 3 ounces cooked whole-wheat spaghetti


Pour boiling water over the tomatoes, leave for a minute, drain, run under cold water and skin. Chop the tomatoes coarsely. Chop the olives finely. Crush the garlic. Heat the oil in a saucepan. Add the tomatoes, olives, garlic, oregano, and pepper. Simmer, uncovered, over a low heat for about 15 minutes, stirring occasionally. Add the parsley and cook for 2 minutes longer. Meanwhile, cook the spaghetti, and when it is ready drain it and pour the sauce over it. This is nice accompanied by a side salad.
