Seasoned Roasted Potatoes


  • 2 lb. Yukon Gold potatoes, peeled and sliced in 1/4" discs
  • 2 tbsp olive oil
  • 1 tsp Penzey's Fox Point Seasoning
  • 1 tsp Brady Street Cheese Sprinkle


Preheat oven to 375 degrees.

Place the potato slices in a microwave-safe dish with 2 tbsp water and cover them with plastic wrap or paper towelling. Steam the potatoes in the microwave for 4-5 minutes to parcook them.

In a large bowl, combine olive oil and seasonings. When the potatoes have steamed, toss the slices with the oil and seasonings until all the slices are evenly coated.

Place the slices in a single layer in a 9x13 casserole dish that has been liberally coated with cooking spray. Roast the potato slices for 15 minutes, uncovered, in the oven. Flip them over and continue to roast on the second side for another fifteen minutes. If you like a browner potato, flip again and let them roast for another 15 minutes or until desired brownness.
