Savoury Mushroom Bake


  • ¼ cup whole wheat flour
  • ¼ cup rolled oats
  • ¼-½ tsp garlic salt
  • ¼ cup vegan margarine
  • 2 cups mushrooms
  • 2 tsp vegetable oil
  • cup tofu
  • 1 tbsp soy yogurt
  • 1 tsp water
  • ½ tsp miso
  • 1 tsp tahini
  • 1 tsp lemon juice
  • 1 tsp paprika


1. Mix the flour, oats and garlic salt in a bowl. Rub in the margarine finely. Put the mixture in a greased oven proof dish and bake at 375 for about 10 minutes.

2. Slice the mushrooms. Saute them in oil for 3-4 minutes.

3. Put the tofu, yogurt, water, miso, tahini, lemon juice, and paprika into a liquidizer and blend thoroughly.

4. Stir the sauteed mushrooms into the tofu mixture. Spoon this on top of the flour and oat base, return to oven and bake for 20-25 minutes. Accompany the dish with a mixed salad.
