Quick Salsa Fish

Ingredients

  • 2 tomatoes
  • 1 bunch cilantro (Chinese parsely)
  • 1 tbsp dried cilantro
  • 1 tbsp cumin
  • 1 or 2 jalapeño pepper, to taste
  • 1 tsp salt
  • juice of one lemon
  • 1 lb red snapper or other firm fish that can be baked

Method

To make salsa: In a food processor, fully blend seeded, sliced peppers and cilantro. Add other spices. Coarsely chop the tomatoes and briefly chop in food processor. Add lemon juice and blend briefly.

Place fish in an oven proof dish and cover with salsa. Bake at 375 degrees until done, about 7 or 8 minutes on each side. Serve two with rice and a green salad.
