Pumpkin Coffee Cake


  • 3 cups all purpose flour
  • 1 ½ cups packed light brown sugar
  • 1 ½ cups granulated sugar
  • 1 tsp salt
  • ½ cup pecans, coarsely chopped
  • 3 sticks unsalted butter, cold and cut into small chunks
  • 2 packages Pumpkin Spice Quick Bread Mix


Preheat the oven to 350 degrees and lightly grease a half sheet pan.

Prepare 2 packages of the quick bread mix according to the directions on the package.

For topping, mix the first four ingredients thoroughly in a medium bowl. Cut in chunks of butter using a pastry blender until only pea-sized pieces of butter remain. Mix in the pecans. Set aside.

Spread cake batter evenly on the greased half-sheet pan. Sprinkle with the crumb topping. Bake in the preheated oven for 45-50 minutes, until the top and edges are browned. Cool on a cooling rack; then cut into serving sizes.
