Polenta with Chili

Ingredients

  • 8 cups water
  • 2 cups cornmeal
  • 2 cans (15 oz) chili beans
  • 1 can (15 oz) tomato sauce
  • 1 pkg crumbles
  • optional toppings (sour cream, cheese, etc)

Method

Bring water to a boil. slowly add cornmeal, stirring constantly. Return to boil, reduce heat to low, and cook 10-15 minutes or until very thick.

Spread cooked cornmeal (polenta/mush) into a 13x9 pan. Chill until set and firm.

In a mixing bowl, mash up canned beans. add tomato sauce and crumbles. season if needed. spread over cooled polenta. Bake at 350 for 45 mintues.
