Polenta Cake


  • 1 cup unsalted butter
  • 1 cup plus 3 tablespoons sugar
  • ½ teaspoon salt
  • zest of 2 lemons
  • 3 eggs
  • 1ts p vanilla
  • juice of 1 lemon
  • 1 ¼ cup cornmeal or polenta
  • 8 ounces almonds, ground (1 1/2 C)


Butter springform pan.
Preheat to 350.
Cream butter and sugar, eggs, zest, salt. Add vanilla and lemon juice. Set aside.
Mix cornmeal, almonds, baking powder. Add to the butter mixture and stir until well combined. Spread evenly in pan.
Bake 40-45 min. Cool 15 min in the pan. Cool on rack.
