Pear Streusel Tart



Prepare in a 9 1/2- or 10-inch tart pan, glazing with the egg yolk:

Baked Flaky Pastry Crust, or Pat-in-the-Pan Butter Crust

Let cool completely.
Position a rack in the center of the oven. Preheat the oven to 350.
Peel, core, and slice 1/4" thick:
1 1/2 pounds firm ripe pears (about 3 medium-large), preferably Bosc or Anjou.
Measure 3 cups pears and toss with:
1/3 cup sugar
2 tablespoons all-purpose flour
Distribute the pear mixture in the tart crust. Cover evenly with:

Bake the tart until the pears feel tender when pierced with a fork, 40-50 minutes. Let cool completely on a rack. Serve the tart on the day it is made.

Yield: 8 servings
