Oh Snap! It's Dinner!

Ingredients

  • 2 tsp grapeseed oil
  • 2 tsp butter
  • 2 cubes frozen basil from Trader Joe's
  • 1 cube frozen garlic from Trader Joe's
  • ½ cup cannellini beans, rinsed and drained
  • 1 cup frozen broccoli florets
  • ½ cup frozen mixed vegetables, whatever you have in the freezer
  • 1 oz. parmesan cheese, grated
  • 1 oz. almond slivers, toasted golden brown
  • 3 oz. dry pasta, I used long fusilli and broke them into 1" pieces

Method

Put a big pot of water on to boil for the pasta. While gets going, put the oil, butter, garlic, and basil in a frying pan on medium low heat and melt them all together into a sauce format. When it's bubbling, add the beans and the frozen mixed vegetables and cook them gently in the sauce while the pasta is cooking. When the pasta is finished boiling, drain it, and then add it to the pan with the vegetables and beans. Stir it up to homogenize everything.

Plate, and top the finished dish with parmesan cheese and toasted almonds.

This serves 2 medium sized eaters or 1 completely ravenous person.
