Not Refried Beans


  • 1 pound pinto beans
  • 1 pound grated sharp cheddar cheese
  • 2 onions, peeled and cubed
  • 4 cloves garlic, peeled
  • ½ tsp red pepper flakes
  • 1 tbsp coriander
  • 1 tbsp cumin
  • salt and pepper, to taste


Clean beans carefully, watching out for bits of dirt or small stones. Leave beans to soak overnight. Cover beans with water and all other ingredients except cheese. Bring to a boil and lower heat immediately. Cook until soft (approximately 2 hours at a simmer). Cut off heat and drain off any excess liquid. Add cheese and stir until melted. Place bean mixture in bowl of food processor. Using pulse, blend as smoothly as desired. Add a little water if the mixture seems to thick.

Can be used as a dip (you may want to add some salsa to make it a bit spicier) with taco chips or with soft tortillas as a basis for burritos.
