Northern Corn Bread

Ingredients

  • cup buttermilk
  • 2 to 3 tablespoon melted butter
  • 1 ¼ cups stone ground cornmeal
  • ¾ cup ap flour
  • 1 to 4 tablespoons sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • cup milk

Method

POsition a rack in teh center of the oven. Preheat the oven to 425 d Grease a 9x9 inch pan or a standard 12 muffin pan or line with paper cups. Whisk together thoroughly in a large bowl:
cornmeal
flour
sugar
baking powder
baking soda
salt

Whisk together in another bowl:
eggs
milk
buttermilk

Add the wet ingredients to the dry ingredients and stir just until moistened. Fold in the melted butter. Scrape the batter into the pan and tilt (if using a square pan) to distribute evenly. Bake until a toothpick inserted in the center comes out clean, 10-12 minutes in a muffin pan, 20-25 minutes in a square pan. Serve hot.
