Noodles W/ Creamy Leek & Mushroom Sauce

Ingredients

  • 3 ounces uncooked whole-wheat spaghetti
  • 1 small leek
  • 1 ½ tablespoons Earth Balance
  • 2 cups mushrooms
  • 1 ½ tablespoons whole wheat flour
  • cup regular soy milk
  • ½ teaspoon mustard
  • ½ teaspoon Marjoram, dried
  • teaspoon sea salt
  • teaspoon black pepper

Method

Cook the noodles until tender in boiling salted water. Clean and chop the leek finely. Melt 1 tablespoon margarine in a saucepan and saute the leek for 3-4 minutes. Slice the mushrooms and add them to the pan; cook for a further 3-4 minutes. Stir the flour into the pan, then slowly add the milk, stirring constantly (if a thinner sauce is desired add a little more than specified) until thickened and boiling. Lower heat and simmer while adding mustard, marjoram, and seasoning. When the noodles are cooked, drain them and toss them with the remaining tablespoon of margarine. Pour sauce over them and serve.
