Macaroni Stew

It is easier to eat this dish with a spoon than a fork.

Ingredients

  • 3 ounces whole wheat macaroni
  • 1 small onion
  • 1 tbsp vegetable oil
  • 1 small zucchini
  • 1 small potato
  • cup shelled peas
  • cup water
  • 1 tsp yeast extract
  • 1 bay leaf

Method

1. Cook the pasta until tender.
2. Chop the onion. Saute it in the oil in a saucepan for 2-3 minutes.
3. Chop the zucchini into thick slices. Dice the potato finely. Add these ingredients to the onion. Saute for another minute or two, stirring.
4. Add the peas, water, yeast extract and bay leaf. Bring to the boil, then lower heat, cover pan, and simmer for 7-10 minutes.
5. Add the cooked drained pasta to the vegetables and cook for a minute or two longer. Remove bay leaf before dishing up.
